Lecithin is a plant-derived, versatile and label-friendly ingredient. It is primarily used as an emulsifier to help maintain a stable emulsion between unmixable liquids. It decreases the surface tension between the liquids and allows them to form a stable blend. Lecithin has a wide range of target applications ranging from bakery, dairy alternatives and chocolate to uses in pet food, industrial and cosmetic/personal care applications.
