Xanthans are produced by aerobic fermentation of sugars with the bacterium Xanthomonas Campestris. Composed by highly substituted anionic sugar monomers, Xanthans form a double helix. Xanthan gum thickens and stabilizes a wide variety of applications including skin care, hair care and oral care.
