Our crystal malts add that “something special” to your beer, as they contribute to the flavor, color, head-retention and storage capabilities of beer. Note that crystal malts come in a range of different colors, from a light honey shade to darker brown colors, as well as flavor profiles (from sweet to dry) and are suitable for all beer styles.

Dingemans Cara 8 is a very light crystal malt made by drying barley malt at low temperatures. The result is a malt that will lend body, smoother mouthfeel, and foam stability. This malt must be mashed with other kilned malts due to the lack of enzymes.

Through its unique double drying process, Dingemans Special B has a unique aroma and flavor. It imparts a heavy caramel taste and is often credited with the raisin-like flavor of some Belgian abbey ales. It can substitute for chocolate and black malt when bitterness is not desired.

Pauls Caramalt is produced much the same way as Pauls Crystal except that the final roast stage is extended at lower temperatures. The result is a malt that is lower in color, higher in extract, and higher in moisture. Best used in beers where sweetness is less important, but color enhancement and "dry" flavor is required.
