Consumers are increasingly shopping for foods that provide heart-health benefits, but providing a quality, shelf-stable product with satisfying taste and texture can be difficult. Cargill's solutions to this challenge, Clear Valley® omega-3 oil and Barliv™ barley betafiber, was highlighted in a granola bar prototype at IFT.

In a short video, Dr. Willie Loh, Ph.D. remarks about how innovation in oils technology is key to helping food manufacturers and food service operators address both the dynamic regulatory environment and consumer demands.
Clear Valley® omega-3 oil enables a claim of “good” or “excellent” source of ALA omega-3. It contains up to 30% ALA, which provides a minimum of 160 mg of omega-3 in most applications. It is shelf stable for more than nine months, taste neutral, and low in saturated fat.
Barliv™ barley betafiber is a natural extract of barley beta-glucan that contains a minimum of 70% barley beta-glucan soluble fiber. Its concentrated form allows for lower rates of inclusion and it is nearly imperceptible in taste, smell or mouthfeel in the finished product. It has been authorized for an FDA health claim: Diets low in saturated fat and cholesterol that include 3 grams per day of beta-glucan soluble fiber from barley betafiber may reduce the risk of heart disease.
