Flavor stability of fats and oils is critical to consumer acceptance of food items because off notes will be perceived as an indication of poor quality. High-stability oils possess exceptional oxidative stability and are suitable for applications such as frying, roasting, dressings, sauces and as flavor carriers or anti-dusting agents for seasonings.
