Cargill breakfast concepts at IBIE 2007 meet diverse consumer needs
MINNEAPOLIS – Visitors to Cargill’s booth (#1831) at the International Baking Industry Exposition (October 7-10, Orlando, Fla.) can sample and learn more about two new breakfast prototypes that address distinct consumer demands.
Maple Brown Sugar Breakfast Cookies
In response to increasing obesity rates among children, some schools are beginning to mandate that their meals include more whole grains and fiber-rich offerings. Cargill has responded to this customer and consumer need with a breakfast cookie that provides an excellent source of fiber and eight grams of whole grains, with a pleasing taste kids will love. The cookie contains zero grams trans fat and delivers enhanced nutrition to both kids and adults in a convenient, on-the-go form. The cookies feature two ingredients from Horizon Milling, GrainWise™ wheat aleurone and WheatSelect® white spring whole wheat flour.
GrainWise™ wheat aleurone is a natural, concentrated source of the essential vitamins and minerals found in whole grains. WheatSelect® white spring whole wheat flour is 100 percent whole wheat, but gives products more of the lighter color, softer texture and milder flavor of white flour that appeals to many consumers.
Lemon Poppy Seed No-Sugar Added Muffin
According to the American Diabetes Association, about 21 million consumers have diabetes and another 41 million are pre-diabetic. Reducing dietary sugar and calorie intake while still enjoying great tasting foods is important for many of these consumers. In response, Cargill developed a lemon poppy seed no-sugar added muffin. The muffin contains Cargill’s SweetDesign™ sweetener system, a sugar replacer that contains 56 percent fewer calories on a weight basis compared to sugar.
SweetDesign™ enables manufacturers to develop baked goods to meet their targeted claims, including sugar-free, no-sugar-added, or reduced-calorie, (depending upon the formula) SweetDesign™ is a convenient one-for-one replacement for sugar. Baked goods containing SweetDesign™ look and taste as if they contain sugar, and can be a tool to help consumers better manage sugar intake, calories and a diet for overall health.
