

Refining for Home Use
Our purest salt - more than 99.9 percent pure - is refined through our vacuum evaporation process. This is the purest salt you will find in gourmet kitchens and on supermarket shelves. To make it, we start the salt-making process all over again, but this time under controlled conditions at our refinery. First, we dissolve tons of solar salt in tanks of pure drinking water, which removes dust and some trace minerals that might have clung to the salt crystals through harvest.
From the tanks, the brine is passed through vacuum evaporators, which
remove the water and crystallize the salt. Because water boils at a
lower temperature in a vacuum, vacuum evaporators use less energy than
it would take to evaporate the same amount of water in the open air.
After the salt re-crystallizes, it's dried, filtered, and air-cooled.
A series of vibrating screens allows us to segregate the crystals into
various sizes. Not to be overlooked is the final step in producing high
quality salt, and that is packaging.
