Thanks to our continuous improvements in pectin processing, we are now able to bring you a first new pectin that is the result of process innovation. UniPECTINE® XP OF 485 C – a low methoxyl amidated (LMA) pectin that raises the bar for performance and versatility.

Performance

Higher functional performance versus standard LMA pectins translates into;

- increased gel strength,
- reduced syneresis,
- more robust product stability in different fruit systems.

Process

Milder process conditions help protect the pectin structure during production, allowing this LMA pectin to achieve higher functional performance.

Savings

Thanks to its versatility (suitable for a wide range of recipes & brix levels), operational and cost efficiencies can be achieved.

Applications

The first SKU is performant in lower brix jams and fruit desserts.

In phase 2 we are assessing gelling sugars and glazes. Reach out if you want to collaborate on this.

This pectin complements the existing Cargill’s UniPECTINE® portfolio, containing HM (high-methoxyl), LMA (low-methoxyl amidated) and LMC (conventional low-methoxyl conventional) pectins. In this way, we can meet your manufacturing needs, regardless of pH and fruit inclusion requirements.
