The market
Mexican cuisine – or rather TexMex – is a popular style among many consumers. However, more authentic Mexican flavors and dishes (e.g. Mole Poblano, Pozole and Tamales) have recently been elevated to the top of culinary trend space. The challenge is to bring that authenticity to the consumer in a more convenient way. After all, dishes can take a long time to prepare and ingredients can be hard to find (or expensive).
Off-the-shelf sauces are a great way to add authentic flavor to a dish if they can be offered in a convenient more affordable format. These sauces do have additional technical challenges to remain homogeneous over time, while still meeting the higher demands from consumers for no added sugars, and label-friendly ingredients.

Our optimized recipe allows for a significant reduction in green tomatillo usage by adding courgette/zucchini for a richer texture (a common technique used in Mexican Taquerias), without compromising on quality or authenticity. Perfect for enchiladas, tacos, or as a fresh topping, it’s the ideal solution for kitchens looking to balance flavor, label transparency, and efficiency.
