Available in both cook-up and instant versions, SimPure® Bright* solutions will enable you to achieve the balance between label-friendliness and visual and textural appeal. Like other SimPure starches, you can label this corn-based product simply as “starch” or “corn starch.”

Brightening up bakery fillings 

Cargill experts have tested the performance of SimPure® Bright in bakery fillings for vanilla (both cooked/ready to use and filling mixes), instant bakery creams (custard style), and fruit fillings (e.g., apricot and red fruits). In each case, the product has been shown to be bake stable and offer freeze-thaw stability. 
 

Your solution for label-friendly bakery success 

Available in both a hot process cook-up starch variant (SimPure® Bright 99406) and a cold instant starch option (SimPure® Bright 99476), these solutions will enable you achieve the balance between label-friendliness and visual & textural appeal. Meeting a real bakery filling need

The SimPure® Bright range comes in direct response to demand from you, our bakery customers.  

Through developments in our manufacturing process, we were able to develop a starch solution that is still white after processing. Since it has no impact on the color of your end products, SimPure® Bright solutions are suitable for enhancing the appetizing appearance of a broad range of light colored bakery fillings.  

Beyond visual appeal, SimPure® Bright offers excellent palatability and enables you to achieve a creamy, and viscous texture in your bakery product. Since SimPure® Bright helps to achieve a higher viscosity, it has been shown to be comparable in dosage to modified starch in certain applications. This means that certain customers may benefit from reduced starch dosage when compared to using other label-friendly starches.

The choice of SimPure® Bright 99406 (cook-up) or SimPure® Bright 99476 (instant) depends on your specific requirements.  

So, for example, if you are a bakery fillings manufacturer looking to make a label-friendly upgrade to your pumpable fillings (e.g. for injection into a donut), you may wish to opt for SimPure® 99406 (cook up). However, if you are supplying your bakers with a dry powder mix (e.g. to mix with milk and then inject), SimPure® 99476 (instant) may be the choice for you.  

In the case of the latter this instant starch brings you convenience and energy savings in your production. After all, “we cook the starch, so you don’t have to.” Either way, this is where our technical expertise comes into play in helping you select the right starch to meet your unique needs. 

A bright future in fruit fillings

Our fruit application experts have conducted several tests on the efficacy of SimPure® Bright 99406 (cook-up) in fruit fillings. For example, tests have shown that this solution helps bakers achieve a smooth and bake stable apricot filling with a whiter aspect. Furthermore, the filling was shown to be freeze stable. Interestingly, SimPure® Bright 99406 was shown to give higher viscosity (+20-30%) in this fruit filling than SimPure® 99405 label-friendly starch using a rapid viscometer analyzer (RVA). This higher viscosity performance translates into the potential for a 5-6% decrease in dosage, in order to achieve a similar texture.  

In fruit fillings, SimPure® Bright 99406 is an ideal solution for manufacturers producing fruit fillings, and immediately applying them. Should you be a supplier of fruit fillings to your bakery customers (and therefore require transportation in cold storage for a longer period), we would advise you to combine this cook-up starch with another label-friendly texturizer to limit syneresis and extend shelf-life e.g. pectin. Our experts can advise you on how to achieve the optimal blend, while maintaining the texture functionalities.
