It’s time to take a fresh look at this age‑old ingredient from seaweed

Carrageenan has been part of our food system for centuries – quietly doing its job, rarely noticed, and largely taken for granted. Yet today, it sits at the center of an increasingly polarized conversation.

That debate has been particularly visible in the United States and France, where early laboratory research in the US and more recent French observational studies on food additives have been widely amplified by media and consumer apps – often without clearly distinguishing between correlation and causation, or between different types of carrageenan.

As a result, carrageenan has come to symbolize, for some, “over-processing” or unnecessary complexity in food. For others – particularly those working inside the food industry – it remains one of the most reliable, well-known, and functional ingredients available.

So how did we get here? And more importantly, how do we move forward?

It is time to change the carrageenan conversation – not by dismissing concerns, but by grounding the discussion in facts, context, and a clearer understanding of what this ingredient is, why it is used, and what science actually tells us.

Carrageenan: Myths vs. facts

Myth 1: Carrageenan is the same as poligeenan (degraded carrageenan). 

Fact: They are not the same substance. Poligeenan is a low‑molecular‑weight material created under harsh acid and heat conditions and is not approved for food use. Food‑grade carrageenan has a much higher molecular weight, is tightly regulated, and has been repeatedly assessed as safe by global food‑safety authorities.

Myth 2: Carrageenan “breaks down” in foods and becomes unsafe.

Fact: Significant depolymerization requires extreme conditions (very low pH, very high temperature, prolonged treatment) that are not representative of normal food processing or digestion. Importantly, carrageenan is not intended for low‑pH fruit systems. 

What matters: Different applications require different solutions. Carrageenan is well suited to neutral‑pH, protein‑rich systems like dairy. For acidic products such as jams, pectin is the appropriate and established choice – which is why there is no technical need to use carrageenan in those applications.

Why do we use carrageenan?

At its core, carrageenan is a texturizing ingredient. It helps food behave the way consumers expect it to behave – smooth, creamy, stable, and consistent from the first spoonful to the last sip.

In dairy applications in particular, carrageenan has a unique synergy with milk proteins that few other ingredients can match. This is why it has become a workhorse in products such as chocolate milk, dairy desserts, and flan‑style puddings.

Take a simple example: chocolate milk. Without a stabilizer, cocoa particles naturally sink to the bottom. Carrageenan keeps those particles evenly suspended, ensuring the product looks and tastes the same throughout its shelf-life.

Beyond stability, carrageenan enables:

  • Creamy mouthfeel with lower fat or sugar.
  • Heat stability during UHT and retorting.
  • Reliable gelling with a plant-based ingredient.
  • Cost‑effective performance at very low use levels.

In other words, carrageenan plays a quiet but essential role in delivering quality, consistency, and affordability at scale.

Where does carrageenan come from?

Carrageenan is derived from red seaweed, harvested from coastal waters. Humans have been consuming seaweed for thousands of years, and you may be surprised to learn that carrageenan itself has been used in food for more than 600 years.

Its name is believed to come from the village of Carragheen on the south coast of Ireland, where people historically collected Irish moss (Chondrus crispus) and boiled it in milk to create a naturally set pudding. That simple observation laid the foundation for what would later become a key food ingredient.

While sustainability is not the sole reason carrageenan is used, its marine origin is an increasingly relevant part of the broader conversation about responsible sourcing. After all, from a sustainability perspective, seaweed has notable advantages:

  • It does not require arable land or freshwater.
  • It absorbs CO₂ rather than emitting it.
  • It grows rapidly in marine environments.

Why is there a debate about carrageenan’s safety?

Despite its long history and regulatory approvals, carrageenan has become controversial – largely due to confusion, misinterpretation of studies, and how information spreads today.

One major source of misunderstanding is the conflation of food‑grade carrageenan with poligeenan (also known as degraded carrageenan). These are not the same substance.

Poligeenan is produced under harsh acid and heat conditions, has a much lower molecular weight, and is not approved for food use. Food‑grade carrageenan, by contrast, is produced under controlled conditions and must meet strict specifications.

European and global authorities have repeatedly evaluated carrageenan. EFSA’s 2018 re‑evaluation found no safety concerns for carrageenan or processed Eucheuma seaweed, and JECFA (Joint FAO/WHO Expert Committee on Food Additives) has confirmed its safety for all population groups, including infants.

Carrageenan is flagged as “an ingredient to avoid” by “apps”. This classification is based on the latest study which often do not clearly distinguish between correlation and causation. Independent health agencies—at a national level ANSES (France) and EFSA at the European level – are the only legitimate bodies to translate scientific data into recommendations binding on economic actors.

Addressing the low‑pH and depolymerization question

One point that frequently resurfaces in public debate is whether carrageenan can become “degraded” during use – particularly in low‑pH applications such as fruit preparations or jams.

This concern deserves to be addressed clearly.

It is true that carrageenan can undergo some degree of molecular breakdown under extreme conditions – very low pH, very high temperatures, and prolonged processing times. However, the conditions required to create poligeenan‑like material are far removed from normal food processing or digestion.

More importantly, this highlights a broader principle that is sometimes lost in the debate: there is no single “right” texturizer for every application.

Carrageenan is well suited to neutral‑pH, protein‑rich systems such as dairy. It is not designed for acidic products like jams – and it does not need to be used there.

For fruit‑based, low‑pH applications, pectin is the appropriate and widely accepted solution. It has a long history of use in jams and fruit preparations and delivers the desired texture under acidic conditions without raising the questions associated with carrageenan in those systems.

From a formulation standpoint, this is not a compromise – it is good product design.

Perception versus science

There is an uncomfortable reality the industry must acknowledge: regulatory approval does not automatically translate into consumer confidence.

Technical terms, E‑numbers, and unfamiliar ingredient names can trigger skepticism – even when the science is clear. Carrageenan has, in some markets, become a proxy for broader concerns about processed foods.

The risk is that simplification becomes oversimplification. Removing an ingredient may solve a perception issue on paper, but it can introduce new trade‑offs. When it comes to carrageenan, in many applications, switching can mean higher formulation costs, less reliable supply, or the loss of a proven, plant‑based ingredient that delivers consistent performance at scale.

The better approach is not avoidance, but context and explanation.

What can we, as an industry, do to change the conversation?

Changing the carrageenan conversation requires more than repeating that an ingredient is safe. It requires better storytelling, clearer distinctions, and more transparency about choices.

  • Explain what ingredients actually do – and why texture matters.
  • Be explicit about differences between carrageenan and poligeenan.
  • Acknowledge application limits instead of ignoring them.
  • Offer alternatives where they make sense, such as seaweed powders or pectin.

Most importantly, we must position ourselves not as defenders of a single ingredient, but as guides helping customers navigate complexity.

A more balanced way forward

Carrageenan sits at the intersection of science, perception, and communication. Its story is not unique – but it is instructive.

When complex food systems are reduced to binary judgments of “good” or “bad,” everyone loses. When we engage openly, explain trade‑offs honestly, and match ingredients to the right applications, trust follows.

Changing the carrageenan conversation starts with a simple step: taking a fresh look at what this ingredient really is – and what it is not.

It is time to move beyond headlines and return to evidence, context, and constructive dialogue.
