Taylor loves sweet yogurts, but her parents want to make sure they are lower in sugars and higher in fruit content.

The market

Sugar-related claims influence European consumer purchases of yogurts more than for milk. A “low/no or reduced sugar” claim influences the purchasing decision of 20% of European consumers when buying spoonable/drinkable yogurt .*

At the same time, the conversation around artificial sweeteners is changing. More natural sugar options are being called out on menus and products. Fruit purées are used, as are pulps and pastes to add sweetness & texture, and can contain stevia.

The prototype

This sugar-reduced** fruit yogurt contains SimPure® functional native waxy corn starch to stabilize to the fruit preparation, while EverSweet®***, a next-generation stevia sweetener produced by fermentation, helps to deliver a sweet taste with minimal off-notes.
