Flour Salts for Food Processing

Flour salt, also called powdered salt, is a unique type of sodium chloride that has been pulverized to create the smallest and finest granulations of salt crystals.

Flour salt, also called powdered salt, has been offered by salt suppliers to be utilized in food manufacturing for a long time. This unique type of salt is food grade sodium chloride or potassium chloride that has been pulverized to create the smallest and finest granulations of salt crystals. With this fine-powdered crystal size, it allows for increased solubility and blendability compared to standard granulated table salt. With increased solubility, food processors can be assured that the maximum amount of salt is dissolved into their food application, thus optimizing the food system for taste, consistency, texture, and other properties. This also means that the salt will dissolve rapidly on a person’s tongue, which creates a quick burst of flavor. The increased blendability that this unique salt provides means that it can deliver a smooth, even consistency and undetected presence in a variety of food applications. This is especially favorable for food applications where it’s crucial to product quality to eliminate grittiness and promote a uniform taste throughout.

This specialty salt ingredient exists to fulfill a variety of purposes for various food applications. Because of the unique functional characteristics of flour salt, food processors require it for things like icings and frostings, dry soups, cereal, flour and spice mixes, confectionary items, butter, cheeses, and snacks. Powdered salts can also be ideal for use in mildly abrasive household cleaning products as well as many personal care items, such as toothpaste, cosmetics, and pharmaceuticals.

Many chefs and food manufacturers understand the frustration of creating a dish or food product that has an uneven distribution of flavor or random pockets of saltiness. Uneven salty flavor can quickly lower the quality of a processed or prepared food, but simply utilizing the correct salt ingredient for a given food application can completely change the outcome of a final product. In these cases, flour salts are an important solution for many food applications in order to create the correct flavor profiles.

Cargill Salt Group has a full portfolio of salt products that are offered as flour and powdered salts.
