Video: Alberger® Salt's Unique Production Process

Alberger Salt’s hollow, pyramid-shaped crystal is what gives this salt its superior performance.

Alberger® Brand Flake Salt is produced by Cargill’s proprietary Alberger method. Brine is slowly heated and gently agitated in an open-pan evaporation process, allowing for hollow pyramid-shaped crystals to form. This unique crystal shape gives Alberger® Salt its superior sensory benefits, rapid solubility, strong adherence, and lower bulk density. These benefits mean that food products made with Alberger® Salt will deliver a quick flavor burst at the first bite, have a more consistent flavor profile throughout, will result in less salt fall-off and waste, and more.

Because of the salt crystal’s unique shape and distinctive characteristic, it can also provide up to 50% lower sodium by volume compared to granulated salt, all with potentially no ingredient changes to the label. This helps allow customers to meet their sodium reduction goals without compromising great taste.

Cargill’s Alberger® Flake Salts are available in a wide selection of grades and screens – with or without additives – and are ideal for multiple food processing applications, including baking, in meats, cheese, seasonings, koshering, topical, and more.
