Combining functional properties with sensory benefits
Most texturizing ingredients display valuable properties over and above their structuring capacity. They may impart texture with sensorial qualities or add to the products’ functional benefits. Starches may bring softness or a pleasant powdery feel and extra body to the product. Some hydrocolloids will provide extremely high resistance to temperature stress. Should you look for a thickener to provide shine or a mat effect, or a suspending agent which can facilitate penetration or offer longer playtime, we make every effort to assess all facets of an ingredient’s possibilities so that you can make the most of them in your formulation.
Providing high-precision ingredient profiles
Texture evokes emotions, but at Cargill, it is first and foremost a science. That’s why we developed the Texture Profiling System, a unique tool that will help you select the right functional ingredient and accurately characterize textures. It involves indicators anticipating all aspects of product formulation - appearance, application, pick-up, after feel or cost. Specific emphasis has been placed on perfecting the understanding of product rheology for its ability to provide a comprehensive view on textures - the yield value can be related to the suspending ability of a gel or provide useful information on product behavior from packaging to fingers, just as flow properties can be related to spreading or the measure of adhesiveness to pick-up.
