CFIA prototypes: A taste of what’s to come

CFIA 2024 prototypes offer a taste of whats to come CFIA 2024, which was held in Rennes, France on March 12-14, is a leading trade show for food ingredients product development. It was a perfect occasion to introduce visitors from France and beyond to Cargill’s Food Solutions. 

At our stand, we highlighted our different plant-based meat alternative solutions, our label-friendly proposals for dairy, and our latest developments to enable customers to improve the Nutri-Score of their products.

Visitors were welcomed to taste our prototypes, among which we presented a more sustainable chocolate chip cookie; a no added sugars, label-friendly fruit preparation for dairy with SimPure® (label-friendly starch); a label-friendly cream cheese with UniPECTINE® (pectin); and an indulgent Honeycomb Caramel white chocolate coated praline. We also discussed how we can support customers in creating mouthwatering meat mimicking plant-based meat alternatives for your customers.

No added sugars fruity yogurt
This fruit prep is sweetened with EverSweet® (a product of Avansya, a joint venture of dsm-firmenich and Cargill), the sustainably produced next-generation stevia sweetener. It is texturized using the label-friendly corn starch SimPure® 99405.

A tasty cookie with certification
A chocolate chip cookie that features several sustainable ingredients from our portfolio, including chocolate, glucose syrup, lecithin, fats, and are topped off with a hint of sustainably sourced sea salt.

A label-friendly brioche
Our bakery applications experts have created a more label-friendly brioche option by replacing emulsifier E471 with Lecimulthin® RS (de-oiled rapeseed lecithin).

Honeycomb Caramel white chocolate coated praline
A filled praline with a coating based on white chocolate combined with caramelized ingredients. The indulgent praline has a Nordic style filling.

Mouthwatering meat mimicking milestones
Whether creating an alternative to a burger, a plant-based meatball, -sausage, or even looking into hybrid products, Cargill’s building block approach can help you create mouthwatering meat mimicking solutions. At CFIA we showcased four concepts (A sensational plant-based burger; Mouthwatering mimicked meatballs; A sizzling plant-based grilling star; A top veggie dog) that show how we are driving the innovation agenda.

A plant-based fermented alternative to yogurt
This concept, which features RadiPure® pea protein, SimPure® label-friendly starch and WavePure® seaweed powder, benefits from the combination of these ingredients.

A plant-based alternative to cream cheese
Thanks to the combination of our ingredient solutions and expertise, our applications experts have been able to create a delicious plant-based alternative with a shiny appearance and a smooth mouthfeel, with a spreadable texture.

A label-friendly cream cheese
Our applications specialists have created a smooth, slightly gelled cream cheese with great spreadability and a rich, creamy mouthfeel. The product contains UniPECTINE® OF 959 C SB (pectin) to meet the consumer demand for cleaner labels.

A sensational sorbet with a sustainable edge
Today’s consumers are looking for indulgent sensorial experiences, but also expect brands to deliver on sustainability. With these trends in mind, we presented cocoa pulp solutions combined with sustainable chocolate.
