Reformulating for an ice cream with no added sugar and cleaner ingredients whilst keeping the same level of performance and without unbalancing the nutritionals of the recipe can be a challenge:

  • Stabilizers play a crucial role in the final texture (creaminess, coldness, texture) and melting time of the ice cream
